2007 Huge Bear Chardonnay
"The 2007 Huge Bear Chardonnay brings power and rich textured complexity to the table. You'll find the delicious aromas of ripe apple and juicy pear on the nose wrapped in warm butter. These savory scents are echoed on the palate in addition to a squeeze of citrus and an edge of minerality. This particular wine offers a full-bodied, long finishing Chardonnay experience, that will pair up nicely with the likes of seafood in a buttery sauce, specifically grilled salmon, halibut or lobster."
Winemaker’s Tasting Notes: Vibrant light gold color highlights the food-friendly focus of this wine, with a fruit character of fresh apple, Bartlett pear, subtle notes of linden flower, minerality and butter cream that persist in the finish. The nose is of apple, pear, smoky brioche, lemon custard and sweet oak. The taste mirrors the nose with a long finish that is smooth and balanced.
Winemaking Techniques: Grapes picked before 8 a.m. for cold delivery, gently pressed and transferred to tank for cold settling. Transferred to 100% French oak for fermentation, with 25% going through secondary malolactic fermentation. Yeast lees were stirred weekly during aging to encourage flavor development, notably creamy aroma.
